starter: mediterraen potato salad. boil potatoes, slice or dice, which ever u prefer. dice tomatoes and onions. dressing: olive oil and vinegar (1-3 parts), salt and pepper, a dash of sugar, a pinch of herbs: oregano, basil, rosemary etc. serve on a bed of ruccola, together with bread. ( i don't know if ur non-dairy or use dairy products) feta cheese goes well w/ this dish. wine: chablis
main course: filled giant mushrooms. preheat oven to 180 celsius. cut the top and stem off, so it levels on a dish tray. heat on a saucepan w/ olive oil, set aside. filling: dice red & green bell peppers along with the mushroom tops and stems, onion, a clove of garlic, a few black olives, minced parseley. sauté in a saucepan with olive oil, add salt and pepper. topping: moisen breadcrumbs with a blend of lemon juice and olive oil and minced parseley. this gives a crispy crust. (again, if u use dairy, u can't go wrong with a slice of mozzarella instead). bake in the oven for 10-15 min.(if u prefer ur mushrooms softer, bake 5-10 min. longer). serve with boiled white aspagus and rice added with a pinch of saffron, mix in saffron when the rice boils,mix till u get an even color, reduce heat, simmer for 10 minutes. wine: ripe zinfandel. goes also well with the dessert.
boysen berries: preheat oven to 150 celsius. sauce: boil 1ltr water, add 1 cup sugar, juice of 1 lemon, add seeds of 1 vanilla stem (1ts of vanilla essence if u don't have it). mix till sugar melts, reduce to half, set aside to cool. set berries evenly on a dishtray, add sauce, cover with powered vanilla sugar. bake in the oven till vanilla sugar melts/caramelizes (usually 15-20 min.) sprinkle powdered vanilla sugar through a strainer before serving.( if u use dairy, custard sauce and/or vanilla ice cream goes well with this dish. wine:sauternes.
