4 fillets of catfish
1/4 cup dry thyme
2 cups yellow mustard
flour for dredging -- season with salt, garlic powder and pepper (amount depending on your taste)
Don't forget the frying oil. Personally, I like Canola.
Mix mustard and thyme in a large bowl. Put the catfish in the marinade. Cover bowl with plastic wrap. It is best to marinate this overnight.
Preheat oil to 350 degrees F.
Dust fish with seasoned flour patting off excess. Deep-fry until golden brown. It is best to fry a few pieces (2) at a time to keep the oil temperature from decreasing too much.
