Sweet & Spicy Roasted Salmon with Truffle-Scented Roasted Asparagus & Truffle Sweep Potatoes:
(serves 2)
1 lb fresh salmon, cut into 2 filets
2 tbs mirin (sweet rice wine)
2 tbs sake
1 tbs soy sauce
1 tbs whole grain spicy mustard
1 tbs honey
1 tsp (or to taste) hot sauce like Siracha
1 lb asparagus, stems trimmed
2 tbs (approx) olive oil
1 tsp white truffle oil
Salt and pepper to taste
1 or 2 medium (1 pounds) sweet potatoes
1 teaspoon butter, melted
1 teaspoons black or white truffle oil
1/8 teaspoon salt
1 teaspoon bourbon whiskey
Directions:
Preheat oven to 350.
Mix all liquids for salmon marinade in a small bowl. Place salmon in a shallow baking pan and pour marinade over salmon. At the same time, toss asparagus in oils and salt and pepper and spread out on a baking sheet. Roast fish and asparagus for about 15 minutes (they should both be done at about the same time).
Microwave the sweet potatoes for approximately 6 minutes or until tender; Peel and mash the sweet potatoes with a potato masher or ricer (do not use your electric mixer) until they're smooth and free of chunks. Add melted butter, truffle oil, salt, and bourbon. Mix thoroughly to blend.
To serve, place a *** of sweep potatoes in the center of the plate. Top with salmon filet and drizzle a bit of the marinade over the top. Place asparagus around plate. Garnish with remaining parsley if desired.
