Ingredients: flour tortillas, fresh spinach, red onion, red seedless grapes, fresh garlic, monterrey jack cheese or pepper jack cheese, olive oil.
Preparation: chop onion, mince garlic, cut grapes in half, grate cheese. Saute garlic in olive oil (do not burn, it will be bitter) remove garlic from pan. Saute onion and grapes in olive oil, then add the garlic back in and set aside.
Assembly: Place some spinach on a tortilla and top with the sauteed mxture and cheese, place another tortilla on top. Brush each exposed side of the tortillas with olive oil.
Cooking: Place the quesadilla in a preheated non-stick frying pan (coated with olive oil), tortilla should be golden brown and slightly crispy on both sides.
