Hi, welcome aboard...to answer your questions, hair dryer yes, also soaps, cremes, shampoo, but basic depending upon your cabin choice. Irons, no...biggest ship fear is fire, but no worry we'll all be slightly wrinkled. Packing tip is to roll t-shirts or use tissue paper between layers and put socks, underwear, & rolled t's around the edges of your suitcases to keep folded clothes from sliding about which causes the wrinkling. Don't know if Westerdam has self laundry rooms with irons or not, some of HAL's ships do. Coffee, ever important, is available thru room service along with other breakfast items. All you owe is the tip for delivery. Don't recall toothpaste being available in cabin, but it can be purchased in the ship's stores (at a higher than usual price). Same is true with water, you'll be supplied water and soft drinks in your room, but at a more than nominal fee. We always pack about six small 10oz bottles in our suitcases and pick up more in the ports as needed. You can bring wine on board, no problem, but if you take it to the dining room, there will be a "corkage fee" of about $15. I believe a small amount of beer can be brought aboard also. Liquor is the no-no although some say they have never encountered problems or confiscation; others use the above mentioned water bottles, if you get my drift. I didn't check your home base, but I can assure you, even if you're flying in it is worth the stop to pick up water and wine to bring aboard cost wise...but then again we are admittedly frugal.
